Chocolate chip cookies are a classic. I mean, who doesn’t like chocolate chip cookies?! Unfortunately, I have yet to find a worthy gluten free one, which is a real shame. They are often too crumbly or too dense and generally disappointing. So, after some trial and error, I managed to make some chewy chocolate chips cookies that taste like the ones with gluten in them. Then again, it is has been close to 3 years since I’ve had any gluten, so maybe take that statement with a grain of salt?
Either way, these are chewy, delicious and happen to be higher in protein and fiber compared with your typical cookie, gluten free or not! Obviously, that doesn’t really make these ‘healthy’, but we all deserve a tasty treat every now and then, right?
